Job Requirements

Job Qualifications

  • culinary experience required

  • ability to exert up to 50 pounds of force occasionally and 20 pounds frequently
  • ability to stand for entire shift
  • ability to withstand temperature variations
  • thorough knowledge of menus and standard food preparation
  • proficiency in cooking techniques such as charbroiling, poaching, deep-frying, saute, braising, roasting, and par-cooking
  • knowledge of herbs and spices and their proper use

Job Duties

  • Maintain cleanliness and organization of all storage areas
  • complete necessary food and station preparation prior to restaurant opening to ensure prompt and efficient guest service
  • prepare and display buffet food items following hotel standards
  • recognize quality standards in fresh vegetables, fish, dairy, and meat products
  • maintain clean and sanitary environment with proper handling, storage, and sanitation
  • prepare food for banquets following Banquet Event Orders
  • prepare and service food for employee cafeteria as specified
  • prepare all foods following hotel standard recipes and chef’s instructions
  • breakdown buffets and store food and equipment properly after meal periods
  • work banquet food station as scheduled
  • know location and operation of all fire extinguishing equipment
  • practice safe work habits to avoid injury
  • use production charts as per hotel standards
  • support any kitchen position in need of assistance
  • follow all Health Department and company regulations regarding food safety and storage
  • operate and maintain cleanliness of all kitchen equipment
  • maintain a 'Clean As You Go' policy
  • assist in storage and rotation of food items
  • sign keys out and back in under supervision as needed
