Job Requirements
- high school diploma or equivalent
- prior experience in a professional kitchen
- knowledge of Italian cuisine and pasta making preferred
- ability to work in a fast-paced, high-volume kitchen environment
- stamina to stand or walk for up to 8-hour shifts
- capacity to lift and carry objects weighing up to 50 pounds
- adherence to food safety and sanitation regulations
- effective communication skills
- flexibility to work various shifts including evenings, weekends and holidays
- willingness to learn and take direction from corporate chefs, CDC and sous chefs

Job Duties
- Follow and fulfill duties given by corporate chefs, CDC or sous chef
- work with a variety of handmade pastas from various regions of Italy
- keep stations clean and well stocked with required ingredients
- prepare authentic and creative pasta and risotto dishes while maintaining quality standards
- strive to develop innovative pasta menu offerings
- train and develop other culinary team members on pasta making
- assist with tasks from CDC, sous chef, and/or general manager
- develop and follow recipes, portion controls and presentation specifications
- clean food prep areas, equipment and utensils
- adhere strictly to sanitation, food safety and hygiene guidelines
- food preparation and portioning prior to service
- maintain a clean and sanitary work environment
- cook and prepare menu items according to standards set by corporate chefs, CDC and sous chefs
- understand cooking methods, ingredients and equipment
- complete opening duties and workstation setup
- inspect cleanliness and working condition of tools and equipment
- check production schedule and establish priority items
- inform CDC or sous chef of supply needs
- transport and stock supplies
- assist other cooks as needed
- complete closing duties and breakdown workstation
- rotate and properly store food items
- apply advanced knife skills
- maintain exceptional menu knowledge and attention to plate presentation
- prepare both hot and cold items demonstrating various cooking techniques
- maintain solid knowledge of all food products and culinary techniques
- read, measure and execute recipes
