Job Requirements

  • Ability to stand and walk for prolonged periods up to 8-10 hours per shift on hard surfaces in a fast-paced kitchen environment
  • Frequent bending, stooping, kneeling, reaching, and crouching to access low shelves, ovens, and storage areas
  • Repetitive hand, wrist, and arm movements required for chopping, slicing, stirring, and using kitchen tools and equipment
  • Regular lifting, carrying, and moving of food items, stock, and kitchen equipment weighing up to 50 pounds
  • Exposure to hot surfaces, open flames, steam, and sharp utensils with mandatory use of PPE such as gloves, slip-resistant shoes, and protective aprons as required by Cal/OSHA
  • Must be able to safely operate and clean commercial kitchen equipment such as fryers, ovens, grills, mixers, and slicers in accordance with safety protocols
  • Tolerance for temperature fluctuations and working in hot, humid, or refrigerated environments for extended periods
  • Visual acuity and manual dexterity sufficient to perform precise kitchen tasks and identify food safety hazards such as spoilage and cross-contamination risks

Job Qualifications

  • Minimum of 5 years of experience in a professional kitchen, ideally with exposure to Nikkei, Peruvian, or Japanese cuisine
  • Formal culinary training is a plus
  • Strong understanding of traditional and modern cooking techniques
  • In-depth knowledge of food safety standards, cross-cultural ingredients, and kitchen operations in a high-volume environment
  • Clear and professional communication skills with the ability to thrive in a collaborative, fast-paced team setting
  • Passion for precision, presentation, and authenticity in delivering bold, high-quality dishes
  • Flexible availability, including evenings, weekends, holidays, and special events
  • Solid understanding of food safety and kitchen operations
