Job Requirements
- Basic hot and cold food cooking knowledge
- Proficient knife skills
- Knowledge of standards of quality and production
- Four years experience as Cook 2 or equivalent at premier restaurant, resort, or hotel
- High school diploma or equivalent
- Ability to work various shifts including nights, weekends, and holidays
- Compliance with company safety and health policies

- Graduate of accredited culinary program or apprenticeship desirable
Job Duties
- Assign tasks to Cook 2 employees with approval of chefs or sous chefs
- Grill, bake, sauté, steam, and cook menu items including soups and sauces
- Discuss daily events and production schedule with sous chefs
- Make suggestions to improve food production and presentation
- Work with butcher to ensure consistent product, portions, cuts, and amounts
- Maintain clean and orderly work environment
- Follow provided recipes meticulously
- Add garnishes to completed plates
- Time cooking to ensure entrees are completed simultaneously
- Clean cooking surfaces and equipment
- Check food quality at station ensuring consistency
- Arrange cooked food for attractive presentation
- Contribute needed items list to daily food order with chef approval
- Rotate food in coolers and storage to ensure freshness
- Train new Cook 2 employees in kitchen responsibilities
- Set up mise en place and buffet stations
- Comply with all Pebble Beach Company safety and health policies
