Job Requirements

  • Promote and act consistent with the mission of River Stone Chophouse
  • Take and record temperature of food and food storage areas
  • Inspect, clean, and maintain food preparation and serving areas
  • Ensure food is stored and cooked at correct temperatures
  • Check freshness and rotate stock of food and ingredients
  • Properly label all prepared food and discard expired items
  • Adhere to standard portion sizes, cooking methods, and quality standards
  • Follow food specifications and report discrepancies
  • Maintain quality of products served
  • Stock and maintain sufficient food products at line stations
  • Handle, store, and rotate food products and supplies per policies
  • Turn or stir foods to ensure even cooking
  • Maintain hot foods at proper temperature
  • Season and cook food according to recipes
  • Bake, roast, broil, and steam various foods
  • Weigh, measure, and mix ingredients as per recipes
  • Portion, arrange, and garnish food per specifications
  • Test foods to determine sufficient cooking
  • Follow proper plate presentation and garnish setup
  • Wash, peel, cut, and seed fruits and vegetables
  • Carve and trim meats for service
  • Assist in food prep during off-peak periods
  • Substitute or assist other cooks during emergencies
  • Close kitchen following closing checklist
  • Check out with manager at end of shift
  • Attend scheduled employee meetings and offer suggestions
  • Coordinate and assist fellow employees
  • Fill in for employees to ensure guest service standards
  • Consult with supervisory staff to plan menus and specials
  • Estimate food consumption and procure food
  • Plan specials and coordinate with management
  • Check party sheets and prep food accordingly

Job Qualifications

  • Previous experience in a professional kitchen or similar cooking environment
  • Knowledge of safe food handling and sanitation practices
  • Ability to follow detailed recipes and portion controls
  • Familiarity with cooking techniques including baking, roasting, broiling, and steaming
  • Strong attention to detail and commitment to quality
  • Ability to work efficiently in a fast-paced environment
  • Good communication and teamwork skills

Job Duties

  • Cook meats, fish, vegetables, soups, and other hot food products
  • Prepare and portion food products prior to cooking
  • Plate and garnish cooked items and prepare appropriate garnishes for hot menu items
  • Follow health department guidelines for proper food handling, storage, and cooling
  • Take and record temperatures of food and food storage areas
  • Inspect, clean, and maintain food preparation and serving areas for safety and sanitation
  • Ensure food is stored and cooked at correct temperatures
  • Check freshness of food and ingredients, rotate stock, and properly label prepared food

  • Carve and trim meats for service
