Job Requirements

  • High school degree or equivalent
  • Restaurant experience required
  • Ability to read and write in English
  • Ability to communicate clearly
  • Must have reliable transportation
  • Ability to lift 55 pounds
  • Ability to stand for long periods
  • Ability to operate kitchen equipment
  • Ability to follow health and safety regulations
  • Flexible to work nights, weekends, and holidays
  • Ability to provide leadership
  • Ability to maintain patience and composure under pressure

Job Qualifications

  • High school degree or equivalent preferred
  • Prior restaurant experience required
  • Previous kitchen experience preferred
  • Knowledge of restaurant industry operations
  • Ability to make quick, informed decisions on food quality and quantity
  • Ability to read and write in English
  • Clear communication skills with management and coworkers
  • Bilingual Spanish is a plus
  • Basic math skills including counting and simple calculations
  • Ability to follow management direction
  • Leadership skills to provide direction to BOH team
  • Reliable transportation
  • Ability to maintain patience and remain calm under stress
  • Ability to handle multiple priorities and attention to detail

Job Duties

  • Responsible for product quality and presentation
  • Properly prepare and hold products
  • Ensure products are dated, stored and rotated as needed
  • Manage portion control
  • Restock designated cook area
  • Count and/or weigh delivered items
  • Work within established inventory and cost controls
  • Follow recipe and product item builds
  • Work with speed and efficiency
  • Read tickets and listen for direction to determine proper amount of food to prepare
  • Meet or exceed Rubio's service time standards
  • Maintain restaurant cleanliness and facilities as directed
  • Maintain personal hygiene following laws and Rubio's dress code
  • Follow all company safety and security policies and procedures
  • Maintain proper food temperatures
  • Comply with health code regulations including hairnet and glove usage
  • Effectively communicate with the back-of-house team
  • Use and complete training packets with new BOH team members
  • Lead new product roll-out training with BOH team members
