Job Qualifications

  • Associate's Degree or higher in Culinary Arts with a focus on Japanese or Asian Cuisine
  • Minimum 7 years of culinary experience in a high-volume fine dining environment
  • Minimum 3-5 years of specialized experience in sushi preparation including menu development and team leadership
  • Strong knowledge of sushi preparation techniques and food safety standards
  • Excellent leadership and communication skills
  • Ability to work efficiently in a fast-paced environment
  • Passion for delivering high-quality guest experiences

Job Duties

  • Oversee daily operations of the sushi bar, ensuring all dishes meet Nobu's quality, presentation, and safety standards
  • Prepare a variety of sushi and sashimi with precision, creativity, and consistency
  • Develop seasonal and specialty sushi menus in collaboration with the Executive Sushi Chef
  • Supervise and train a team of sushi cooks, fostering a culture of excellence and teamwork
  • Monitor inventory, order supplies, and manage food costs to meet budget targets
  • Ensure strict adherence to hygiene, health, and food safety regulations
  • Engage with guests to provide an exceptional dining experience and gather feedback for continuous improvement
