Job Qualifications
- Associate's Degree or higher in Culinary Arts with a focus on Japanese or Asian Cuisine
- Minimum 7 years of overall culinary experience in a high-volume fine dining environment
- Minimum 3 to 5 years of specialized experience in sushi preparation including menu development and team leadership
- Advanced knowledge of sushi preparation techniques
- Strong leadership and team management skills
- Excellent communication and organizational abilities
Job Duties
- Oversee daily operations of the sushi bar ensuring all dishes meet Nobu's quality presentation and safety standards
- Prepare a variety of sushi and sashimi with precision creativity and consistency
- Develop seasonal and specialty sushi menus in collaboration with the Executive Sushi Chef
- Supervise and train a team of Sushi Cooks fostering a culture of excellence and teamwork
- Monitor inventory order supplies and manage food costs to meet budget targets
- Ensure strict adherence to hygiene health and food safety regulations
- Engage with guests to provide an exceptional dining experience and gather feedback for continuous improvement
