Job Requirements
- high school diploma or equivalent
- minimum of 3 years’ experience in sushi preparation
- leadership experience in a culinary kitchen
- ability to work flexible shifts including evenings weekends and holidays
- knowledge of proper raw fish handling and storage
- valid food handler’s certification
- physical ability to stand for long periods and lift heavy items
Job Qualifications
- proven experience as a sushi cook or sushi chef
- strong leadership and team management skills
- knowledge of food safety and sanitation standards
- excellent attention to detail and creativity in sushi preparation
- ability to work in a fast-paced kitchen environment
- strong communication and interpersonal skills
- culinary degree or relevant certification preferred
Job Duties
- assist the Chef de Cuisine in developing and executing sushi menu items
- lead and train sushi prep and line cooks ensuring consistency and excellence in every dish
- maintain high standards of food safety sanitation and kitchen organization
- monitor inventory and assist with ordering and receiving of sushi-specific ingredients
- ensure proper handling and storage of raw fish and other perishable items
- collaborate on plating presentation and seasonal specials
- support a positive kitchen culture focused on teamwork respect and continuous improvement
