Job Requirements

  • Must be at least 21 years old
  • Ability to work various shifts including weekends and holidays
  • Physically mobile with ability to perform tasks like bending, stooping, reaching, crouching, kneeling, pushing and pulling
  • Ability to respond to visual and aural cues
  • Must read, write, speak and understand English
  • Ability to function in mentally and physically stressful situations
  • Able to operate kitchen equipment including stoves, grills, fryers, mixers and utensils
  • Must be able to exert 20 to 50 pounds of force occasionally and less force regularly
  • Willingness to follow company policies and safety standards
  • Proven ability to lead kitchen BOH staff
  • Responsible for kitchen cleanliness and sanitation logging
  • Capable of managing inventory, storage and food distribution effectively

Job Qualifications

  • High School diploma or GED preferred
  • Ability to operate small kitchen equipment such as mixers, slicers and cutters
  • Familiarity with all cook positions and ability to assume duties and leadership roles as needed
  • Experience working in a team environment
  • Ability to meet attendance guidelines
  • Professional appearance and uniform standards
  • Pleasant personality with good teamwork skills
  • Record of satisfactory performance and reliability in prior and current employment

Job Duties

  • Serves as assistant to the Chef, Buffet Sous Chef, Steakhouse Chef, Sous Chef, Pastry Chef, and F&B Manager, and assumes responsibilities in his/her absence
  • May be assigned to train, give instructions and prepare specialty items
  • Assists supervisor in scheduling and performance feedback
  • Conducts pre-shift meetings
  • Prepares various cold menu items and garnishes accordingly
  • Responsible for the efficient and economical utilization of all products and by-products to facilitate a lower food cost
  • Assists with specials of the day in assigned outlets
  • Inspects the following day’s menus and writes out food requisitions for necessary food portions
  • Ensures fast and clean servicing of all menu items to servers and uniformity in orders
  • Controls food production including proper cooking methods, cooking time and temperature, and sanitation
  • Greets and completes payment transactions for customer orders in assigned outlets
  • Delivers food items to guests
  • Adequately prepares for peak business levels and maintains high guest service levels
  • Adheres to regulatory, departmental, and company policies ethically
  • Performs duties of Bartender or Coffee Bar Attendant if qualified
  • Leads kitchen BOH staff
  • Ensures kitchen safety and hygiene including temperature and sanitation logs
  • Manages inventory, storage, and distribution of foodstuffs
  • Helps with food preparation when necessary
  • Oversees portion control and recipe adherence
  • Leads the line during service
  • Responsible for all food served to customers and food items prepared or reheated for service
  • Closes the kitchen and secures equipment at end of night shift
  • Performs other duties as assigned
