Job Requirements

  • High school diploma or equivalent
  • Culinary experience
  • Ability to stand for entire shift
  • Ability to lift up to 50 pounds occasionally and 20 pounds frequently
  • Ability to withstand hot and cold temperature variations
  • Flexible availability including long hours
  • Knowledge of safe food handling and sanitation
  • Adherence to all health and safety regulations
  • Ability to follow standard recipes and kitchen procedures

Job Qualifications

  • High school diploma or equivalent preferred
  • Experience in hotel or related field preferred
  • Culinary experience required
  • Knowledge of menus and preparation according to hotel standards
  • Proficiency in charbroiling, poaching, deep-frying, saute, braising, roasting, and par-cooking
  • Knowledge of herbs and spices and their proper use
  • Ability to stand entire shift
  • Ability to withstand temperature variations
  • Flexible with long hours sometimes required

Job Duties

  • Maintain cleanliness and organization of all storage areas
  • Complete necessary food and station preparation prior to opening of the restaurant
  • Prepare and display buffet food items according to hotel standards
  • Recognize quality standards in fresh vegetables, fish, dairy, and meat products
  • Maintain clean and sanitary environment with knowledge of proper handling, storage, and sanitation
  • Prepare food for Banquets following Banquet Event Orders
  • Prepare and service food for the Employee Cafeteria as specified
  • Prepare all foods following hotel standard recipes
  • Breakdown buffets and kitchen line, storing food and equipment properly after meal periods
  • Work banquet food station as scheduled
  • Know location and operation of all fire extinguishing equipment
  • Practice safe work habits to avoid injury
  • Use production charts per hotel standards
  • Support any kitchen position needing help
  • Follow Health Department and company regulations on food and storage safety
  • Operate and maintain cleanliness of kitchen equipment
  • Maintain a 'Clean As You Go' policy
  • Assist in food storage and rotation according to procedures
  • Sign keys out and back in under supervision when needed
