Job Requirements
- High School Diploma or GED
- minimum 2 years of professional baking experience in a high-volume or production bakery or food service establishment
- proficiency in English communication
- ability to perform basic math
- Food Handler's card
- ServSafe certification
- ability to stand, lift up to 40 pounds, and perform repetitive motions
- ability to work in a fast-paced environment
- willingness to work evenings, weekends, and holidays
- adherence to sanitation and safety protocols
- ability to maintain neat and clean appearance
- gaming license as required by San Manuel Tribal Gaming Commission
Job Qualifications
- High School Diploma or GED
- certificate or degree in Baking and Pastry Arts preferred
- minimum 2 years of professional experience in high-volume or production baking within a full-service bakery or food service establishment

Job Duties
- Oversees the preparation and production of a diverse range of baked goods, pastries, and cakes to ensure consistency and adherence to quality standards
- assists in daily production, manages output volumes, oversees recipe execution, and maintains rigorous quality control
- possesses strong knowledge of fundamental and advanced baking techniques, including bread, cakes, dessert pastries, cookies, mousses, and fine chocolate products
- reviews and validates each Baker's production sheet to ensure accuracy and alignment with daily production goals
- conducts daily inventory of essential ingredients
- trains bakery personnel and conducts daily pre shifts
- communicates with management and baking team to address guest and departmental concerns
- ensures proper storage and utilization of food items in accordance with FIFO method
- upholds food safety protocols by verifying expiration dates, labeling, and team compliance
- supports pastry team in special projects and high-profile events
- oversees Serrano Buffet dessert station, maintains cleanliness and presentation
- reports injuries and unsafe conditions
- enforces safety protocols including proper knife handling
- maintains operational records, including logs, sanitation documentation, production sheets, and break schedules
- performs other duties as assigned
