Job Requirements

  • Certificate from accredited culinary school, college or technical school
  • five or more years of hands-on experience
  • three or more years of kitchen or culinary supervisory experience in a high-volume catering environment
  • current certification in food handling and safety sanitation or ability to be certified with minimal preparation
  • valid food handler's card to be obtained within 30 days of hire
  • ability to communicate effectively
  • ability to use and maintain basic food service and kitchen equipment
  • ability to train others
  • ability to analyze profit and loss statements
  • ability to problem solve
  • ability to work under limited supervision
  • ability to operate modern office equipment including computer, fax, phone, and copy machine
  • ability to operate refrigerated catering truck

Job Qualifications

  • Certificate from accredited culinary school, college or technical school
  • five or more years of hands-on culinary experience
  • three or more years of kitchen or culinary supervisory experience in a high-volume catering environment
  • current certification in food handling and safety sanitation or ability to be certified
  • strong communication skills both verbal and written
  • ability to train and supervise kitchen staff
  • knowledge of profit and loss analysis
  • problem-solving skills
  • ability to work under limited supervision
  • skill in operating modern office equipment and refrigerated catering truck

Job Duties

  • Design creative menus and plan production
  • establish presentation technique and quality standards
  • attend and orchestrate all tastings
  • schedule and supervise kitchen employees
  • coordinate and direct training of supervisors and kitchen staff
  • oversee all aspects of culinary operation functions
  • estimate food consumption and purchase kitchen supplies
  • set pars for all menus and maintain recipe binders
  • review menus and analyze recipes
  • assign prices to menu items in accordance with budgetary goals
  • observe food preparation and portion sizes
  • establish and enforce nutrition, sanitation and quality standards
  • perform other duties as assigned
