Job Requirements
- Must be at least 18 years of age
- high school diploma or equivalent
- ability to stand for long periods during shifts
- ability to lift, bend, push, kneel, and walk as required by kitchen duties
- willingness to work flexible hours including early mornings or late shifts
- dependable and flexible with work schedule
- ability to follow strict food safety and sanitation policies
- capability to train and supervise inmate labor and staff
- pass background checks and comply with correctional facility regulations
Job Qualifications
- High school diploma or equivalent
- ability to supervise and lead teams effectively
- knowledge of food handling regulations and safety standards
- experience with food preparation and serving
- strong communication and interpersonal skills
- ability to multitask and adapt to changing environments
- prior institutional food service or restaurant experience is preferred
- basic culinary knowledge
- commitment to maintaining cleanliness and sanitation in food service areas
Job Duties
- Supervise inmate labor and team members in the kitchen during food preparation and service shifts
- prepare, assist, or instruct inmate labor and team members in the timely preparation of quality foods according to menus, recipes, and work instructions
- ensure that all food is stored properly and in a sanitary manner
- serve food during planned meal schedules in accordance with department policies and procedures
- utilize kitchen utensils and equipment to cook, prepare, and serve food meeting nutritional needs
- follow all food safety regulations pertaining to sanitation, food handling, and storage
- train other food service workers in their duties
- maintain a clean work area including cleaning of refrigerators, freezers, cooking equipment, and serving tools
- follow the facility uniform policy
- manage garbage collection and keep kitchen floors free from excess food and trash
- ensure the kitchen is clean and ready for food preparation and serving including sweeping, mopping, and dishwashing
- review proper portions and utensils for food service
- promote a healthy and safe work environment for employees and inmate workers
- perform physically demanding tasks such as lifting, bending, pushing, kneeling, walking, and standing for extended periods
- stand and be on feet for most of the scheduled shift
- perform other related duties as assigned
