Job Requirements

  • High school diploma or equivalent
  • Must be at least 18 years of age
  • Prior institutional food service or restaurant experience preferred
  • Ability to supervise and lead others
  • Compliance with food safety regulations
  • Ability to work independently and as part of a team
  • Physical ability to perform duties including lifting, bending, and standing for extended periods
  • Flexible schedule to meet operational needs

Job Duties

  • Supervise inmate labor and team members in the kitchen during food preparation and service shifts
  • Prepare, assist, or instruct inmate labor and team members in food preparation according to menu, recipes, and work instructions
  • Ensure proper and sanitary food storage
  • Serve food during planned meal schedules in compliance with department policies
  • Utilize kitchen utensils and equipment to cook, prepare, and serve food according to recipes and clients' nutritional requirements
  • Follow all food safety regulations related to sanitation, food handling, and storage
  • Train food service workers
  • Maintain cleanliness of work environment including refrigerators, freezers, cooking and serving equipment
  • Adhere to facility uniform policy
  • Manage garbage collection and keep kitchen floors free from excess food and trash
  • Ensure readiness of kitchen for food prep and serving, including sweeping, mopping, and dishwashing
  • Review proper portions and utensils for service
  • Promote a healthy and safe work environment for employees and inmates
  • Perform other related duties as assigned
  • Be physically able to stand and work on feet for extended periods
