Job Requirements
- Culinary degree
- Minimum 2 years of progressive culinary experience in a hotel or related field
- Previous supervisory or leadership experience preferred
- Knowledge of food preparation techniques and health regulations
- Ability to work long hours
- Ability to lift and move up to 50 pounds
- Strong communication and leadership skills
- Commitment to safety and hygiene standards

Job Duties
- Assist Chef de Cuisine in recruiting and retaining a passionate service team
- Assist Chef de Cuisine with completing accurate inventory and month-end processes
- Ensure 100 percent maintenance of culinary equipment
- Assign and complete weekly cleaning projects
- Lead and guide associates by setting an example of company culture and standards
- Conduct daily pre-shift meetings and shift reports
- Provide hands-on operational support and training
- Follow up on guest issues and communicate with culinary leadership
- Review shift reports and proactively address concerns
- Prepare ingredients for cooking including peeling, chopping, julienne cutting, and dicing
- Recognize quality standards in fresh vegetables, fish, dairy, and meat
- Cook meats, fish, vegetables, soups, and other hot food products accurately
- Follow recipes and plating guides to maintain consistency
- Ensure food is served simultaneously, with high quality and timely
- Maintain a sanitized and orderly kitchen environment
- Oversee food storage and rotation according to procedures
- Breakdown kitchen line and clean equipment properly
- Practice safe work habits to avoid injuries
- Comply with all health department and company food safety regulations
- Perform other job duties as assigned by supervisor
