Job Requirements
- Culinary degree or associate degree or 5 years supervisory kitchen experience
- minimum 5 years food service cooking experience preferably in a non-fast food or high volume operation with progressive responsibilities
- experience with food service software systems
- knowledge of food safety and sanitation
- advanced food preparation and production skills
- familiarity with ordering and inventory management
- attention to detail in food presentation, flavor, and consistency
- ability to use all kitchen equipment
- computer proficiency
- ability to lift up to 50 lbs
- ability to stand and exert mobility for up to 4 hours
- availability to work Sunday to Thursday 12:30 pm to 9:30 pm
- ability to handle exposure to cleaning chemicals, temperature extremes, and noise
Job Qualifications

- proficient knife skills such as diced, julienne, chiffonade, and mince
- proficiency with all kitchen equipment including combi ovens, convection ovens, induction burners, and large batch kettles

Job Duties
- Assist executive chef and chef manager in daily food production
- enforce and support departmental quality assurance by adhering to food handling, safety, and sanitation best practices
- assure compliance with standard recipes and production methods
- assist in production and support areas including commissary and catering
- assist chef with pot sink area staffing and sanitation procedures
- assist in training kitchen staff
- record and monitor food temperatures
- ensure production is organized and meets daily demands
- assist in leading kitchen team with support, guidance, and communication
- recommend changes in procedures and ingredients for menu planning
- test new standardized recipes and recommend to executive chef
- research and update techniques and recipes through conferences and workshops
- assist with special events and catering
- schedule repairs, special cleaning projects, and pest control
- forecast food production quantities
- complete transfers and requisitions
- assist in inventory process for food cost analysis
- provide supervision of staff
- assign work and provide feedback, coaching, and counseling
- assist with performance reviews
- assist with scheduling
- train staff in safe operating procedures
- include safety training in lifting, carrying, chemical control, first aid, and fire prevention
- assume opening and closing responsibilities
- perform other assigned duties and assist with projects
