Job Requirements

  • Culinary degree or associate degree or 5 years supervisory kitchen experience
  • Minimum 5 years total food service cooking experience preferably in a non fast food environment or high volume operation with progressive responsibilities
  • Experience with food service software systems
  • Extensive knowledge of food safety and sanitation
  • Advanced food preparation and production skills
  • Ordering and inventory management experience
  • Attention to detail in food presentation, flavor and consistency
  • Proper knife skills such as diced, julienne, chiffonade, mince
  • Knowledge of all kitchen equipment including combi ovens, convection ovens, induction burners, Anliker vegetable prep machine, broilers, large batch kettles and slicers
  • Computer skills
  • Ability to lift up to 50 lbs
  • Ability to stand and move continuously for up to 4 hours
  • Willingness to work Sunday through Thursday 12:30 pm to 9:30 pm

Job Duties

  • Assist executive chef and chef manager in daily food production
  • Co-responsibility for overall food quality
  • Enforce and support departmental quality assurance by adhering to VDS best practices for food handling, safety and sanitation
  • Assure compliance with standard recipes and production methods
  • Assist in production and support areas including commissary and catering
  • Assist with pot sink area staffing, cleanliness and sanitation
  • Assist in training kitchen staff
  • Record and monitor food temperatures
  • Ensure food production is organized and meets daily demands
  • Lead kitchen team with support, guidance, positive attitude and communication
  • Recommend changes to procedures and ingredients for menu planning
  • Test new standardized recipes and make recommendations
  • Research and update culinary techniques and skills through workshops and conferences
  • Participate in special events and catering projects
  • Assist with scheduling repairs and pest control management
  • Forecast food production quantities and supplies
  • Complete transfers and requisitions
  • Assist in inventory process for food cost analysis
  • Provide functional and administrative supervision of staff
  • Provide direction, assignments, feedback, coaching and counseling
  • Assist with performance reviews and scheduling
  • Train staff in safe operating procedures and equipment use
  • Responsible for opening and/or closing the kitchen unit
