Job Requirements
- ability to stand, walk and or sit continuously for eight plus hour shifts
- frequent twisting, bending, stooping, reaching, walking and standing

- high school diploma or equivalent
- previous culinary leadership experience in hotel or fine dining environments
- knowledge of food safety and sanitation regulations
- strong communication and organizational skills

Job Duties
- consistently offers professional, engaging and friendly service
- oversee daily operations of the kitchen department including banquets, outlets, in room dining, staff cafeteria and stewarding
- responsible for execution of the hotel's strategic plan as it relates to culinary areas
- develop and prepare creative and suitable menus balancing guest requests and food quality
- maintain food and beverage standards through standardized recipes and safe handling
- optimize profitability through inventory monitoring, food cost control and promotional initiatives
- use labor management tools to set and monitor staffing and productivity
- prepare weekly schedules and provide hands-on support
- proactively recruit and maintain staffing levels
- conduct performance management and colleague training
- participate in development and implementation of kitchen and restaurant capital projects
- attend operational meetings and banquet event reviews
- ensure full compliance with hotel operating controls
- oversee staff restaurant menu quality
- promote teamwork and maintain interdepartmental relationships
- participate in media and community opportunities
- ensure compliance with health and safety regulations
- respond personally to food-related feedback
- ensure kitchen equipment maintenance
- actively participate in department head and food and beverage meetings
