Job Qualifications

  • 4-year degree from an accredited culinary college
  • minimum 5 years experience in a restaurant
  • prior supervision of staff preferred
  • excellent customer service skills
  • excellent verbal and written communication skills

Job Duties

  • assist in managing day-to-day kitchen staff and operations as set forth by the Executive Sous Chef
  • assist in scheduling kitchen staff
  • perform basic vegetable preparation including peeling, slicing, dicing, and portioning
  • prepare basic and advanced sauces such as stocks, salad dressings, vinaigrettes, and emulsifications
  • butcher whole poultry, fish, and primal cuts of larger animals
  • maintain cleanliness of kitchen equipment, floors, walls, coolers, and freezers
  • participate in dishwashing duties alongside kitchen team members
  • work line cooking stations under chef supervision
  • plate dishes according to chef's specifications
  • expedite service flow from kitchen to dining room
  • assist in demonstration cooking during presentations
  • support banquet plate-ups maintaining food presentation standards
  • communicate and understand kitchen orders effectively
  • work efficiently and effectively under pressure
  • perform all kitchen functions and assist where needed
  • follow SERV safe sanitary compliance and all safety procedures including knife safety
  • restock clean dishes, flatware, and cooking equipment to appropriate storage areas
  • maintain a clean and orderly kitchen work area
  • follow proper hand-washing procedures
  • stock kitchen supplies and maintain orderly storage
  • sort and remove trash and clean garbage cans daily
  • maintain trash area for proper pickup
  • assist with loading and unloading food deliveries
  • maintain a professional and presentable uniform and grooming
  • communicate effectively with the team daily
  • maintain ownership of the hotel/restaurant
  • perform other duties as assigned
