Job Requirements
- High school diploma or equivalent
- Must have 5 years of cooking experience in a professional kitchen including saucier, prep, banquet, pantry, and hot line
- Ability to work on feet for long hours and carry up to 50 pounds
- Ability to work in a hot environment and navigate stairs
- Ability to speak, read, write and comprehend English sufficiently to communicate effectively with staff
- Must be punctual and able to work flexible schedule including weekends, holidays, and split shifts
- Must maintain a professional and welcoming demeanor
- Must wear proper uniform and maintain personal hygiene
- Must be able to attend all required training and safety courses
Job Qualifications
- High school diploma or equivalent
- Five years of cooking experience in a professional kitchen including saucier, prep, banquet, pantry, and hot line
- Advanced knowledge of banquet production and ala carte dining
- Expertise in soup and sauce preparations, garde manger, butchering
- Strong food product knowledge and diverse cooking techniques
- Knowledge of sanitation standards as outlined by the Health Department
- Proficient use of kitchen equipment and understanding of safety features
- Ability to lead and direct kitchen staff effectively
- Certified Professional Food Manager or willingness to obtain certification
Job Duties
- Be punctual at all times and arrive to work on time consistently
- Work a flexible schedule including weekends, holidays, and split shifts
- Arrive in proper uniform, crisp, clean, and in good repair including wearing a nametag
- Attend all required training and safety courses, and participate in office and departmental meetings
- Report any safety hazards and assist in providing a safe work environment
- Consult with the Executive Chef daily on menus and daily specials preparation
- Oversee kitchen personnel to ensure production meets standards
- Maintain high sanitation and safety standards by training and working daily with staff
- Ensure all personnel are properly trained on equipment and safety features
- Manage food cost and labor cost with the Executive Chef
- Exercise portion control over all food items served
- Work with line cooks in rotation of food for daily specials and employee meals if Executive Chef is not available
- Work in any kitchen area or department when needed such as pantry or dishwashing
- Direct activities of utility personnel ensuring required cleaning
- Oversee servers in kitchen to ensure proper procedures and prompt pick up
- Inform servers of menu and specials information
- Responsible for security and proper use of all kitchen equipment and foods
- Close kitchen ensuring food storage areas are locked and work areas clean
- Supervise all food-related events in Executive Chef’s absence ensuring quality and cost control
- Assist Executive Chef in food inventory and daily maintenance
- Assist in scheduling personnel and maintaining low kitchen labor
- Order all produce
- Become a Certified Professional Food Manager
- Perform other duties assigned by the Executive Chef
