Job Requirements

  • High school diploma or equivalent
  • At least 18 years of age
  • Food safety certification
  • Ability to work in a correctional facility environment
  • Ability to lift, stoop, push, pull and stand for prolonged periods
  • Willingness to wear uniforms and personal protective equipment
  • Ability to adhere to security protocols
  • Excellent communication and leadership skills

Job Qualifications

  • Must be at least 18 years of age
  • Preferably, candidates have at least one year of experience in food preparation or a related role
  • Proficiency in motivating and guiding inmates and team members to excel in food production quantity and quality
  • Food safety certification is required
  • Ability to work independently with minimal supervision
  • Employ tact and discernment when addressing issues in a correctional facility
  • Adherence to basic safety procedures and policies
  • Ability to meet and maintain security clearance requirements
  • Position may involve lifting, stooping, pushing, pulling, and prolonged periods of standing or walking
  • Wearing uniforms and personal protective equipment may be required

Job Duties

  • The Kitchen Shift Supervisor at Marion Correctional Institution is responsible for supervising inmates to ensure meal and food items are prepared in accordance with production plans
  • This role involves training workers, assigning tasks, and coordinating work to enhance operational efficiency
  • The Kitchen Shift Supervisor will also ensure the sanitation of the facility and uphold personal safety by adhering to all standards and regulations
  • The duties and responsibilities of this position may vary based on client requirements and business needs
  • Maintain compliance with Aramark's food preparation and production guidelines
  • Analyze and approve production and temperature reports
  • Offer guidance and supervision to inmates involved in food preparation and tray assembly
  • Follow Aramark guidelines to ensure meals are served promptly and efficiently
  • Be actively involved in meal cooking and serving
  • Print and distribute cooking recipes while ensuring precise measurements and special dietary considerations
  • Guarantee that the storage of food items is both safe and organized within a hazard-free environment
  • Respect security policies and ensure that storage locations are consistently secured with locks
  • Verify that all kitchen utensils, equipment, and keys are returned and stored in secure locations
  • Scheduling and Supervision:
  • Formulate and monitor schedules for chefs, inmates, and food service staff to manage workloads and cleanliness duties
  • Lead and evaluate employees to promote teamwork, efficiency, and professional development
  • Inventory and Maintenance:
  • Provide guidance on inventory management and the correct handling and storage of food and related products
  • Coordinate supply requests and ensure precise inventory oversight
  • Document maintenance tasks for kitchen equipment and execute preventative maintenance procedures
  • Adhere to HACCP protocols and procedures to promote the safe and hygienic handling and storage of food items
  • Keep thorough and accurate records of food safety and temperature measurements, applying corrective actions when necessary
  • Participate in preparation, conservation, and merging of meals while following the 5 P’s approach (Engagement, Retrieval, Combination, Portion Supervision, and Concluding Steps)
