Job Duties

  • attract, retain, and motivate the best culinary talent
  • perform any function within the culinary department including cook and steward
  • conduct daily walk throughs of the kitchen and make recommendations for corrections and improvements
  • conduct daily meetings with the team to ensure preparation and communication
  • attend weekly food and beverage, BEO, leadership, and monthly safety meetings representing the culinary team
  • serve as an example for the culinary team
  • manage department finances, control costs, and manage budget for profitability
  • have thorough knowledge of food allergens and handle guest food allergies with urgency
  • ensure prep sheets are updated and properly used daily
  • guide nightly cleaning of kitchen areas and follow up with stewarding crew
  • assist in creation, costing, and implementation of seasonal and special menus
