Job Duties
- attract, retain, and motivate the best culinary talent
- perform any function within the culinary department including cook and steward
- conduct daily walk throughs of the kitchen and make recommendations for corrections and improvements
- conduct daily meetings with the team to ensure preparation and communication
- attend weekly food and beverage, BEO, leadership, and monthly safety meetings representing the culinary team
- serve as an example for the culinary team
- manage department finances, control costs, and manage budget for profitability
- have thorough knowledge of food allergens and handle guest food allergies with urgency
- ensure prep sheets are updated and properly used daily
- guide nightly cleaning of kitchen areas and follow up with stewarding crew
- assist in creation, costing, and implementation of seasonal and special menus
