Job Requirements
- 3+ years of kitchen management or BBQ leadership experience
- Strong background in Texas barbecue especially brisket trimming smoking resting and slicing
- Experience running offset smokers and managing wood-fired pits
- Proven leadership skills in a high-volume fast-paced environment
- High standards for cleanliness organization and product consistency
- Ability to work early mornings weekends and long cook cycles
- A passion for BBQ craft quality ingredients and continuous improvement

Job Duties
- Lead all kitchen and pit operations from meat prep and trimming to smoking resting and service
- Manage offset smokers using traditional post oak fire management techniques
- Ensure every product meets Tejas standards for quality consistency and presentation
- Oversee execution of core menu items alongside specialty and seasonal offerings
- Train mentor and hold accountable all kitchen and pit staff
- Maintain a clean organized and food-safe kitchen environment at all times
- Manage ordering inventory and yields with a focus on minimizing waste and controlling costs
- Build and maintain prep systems production schedules and pars
- Work closely with ownership to uphold and evolve the Tejas brand and standards
