Job Requirements
- Must be able to work in fast-paced, high-energy, physically demanding environment
- Ability to spend 90 percent of working time standing, walking and reaching
- Capability to push, pull, lift objects from lower to higher positions or move them horizontally
- Ability to grasp objects of various sizes and maintain body equilibrium
- Physical ability to climb ladders, stairs, and ramps
- Must be able to carry loads greater than 35 pounds and exert up to 50 pounds of force occasionally
- Clear communication skills in primary restaurant language, primarily English
- Hearing at normal speaking levels with or without correction
- Vision including close, distance, color, peripheral, depth perception and ability to adjust focus
- Willingness for limited travel up to 20 percent of the time
- Ability to read and interpret safety rules and manuals
- Ability to effectively present information and respond to questions
- Basic mathematical skills including addition, subtraction, multiplication, and division
Job Qualifications
- High school degree or GED required
- Bachelor’s degree preferred or Associate’s degree in related field
- ACF certification or equivalent program
- Certified Professional Food Manager Certification
- Health permit, food safety, and Alcohol Awareness certifications required
- Minimum five years experience in high volume food and beverage environment
- Excellent written and verbal communication skills
- Ability to supervise multiple levels of culinary workers
- Strong judgment and decision-making abilities
- Ability to handle heavy workload and multiple tasks in fast-paced setting
- Ability to interact professionally with other departments and outside contacts
Job Duties
- Perform all responsibilities of each position in the kitchen
- Assist General Manager in financial forecasting, recruiting, entertainment, sales, and marketing
- Develop menus for restaurant operations
- Conduct daily walk through of inventory to determine production
- Maintain appropriate par levels by conducting proper ordering procedures
- Perform daily line checks ensuring taste, temperature, and quality consistency
- Enforce high standards of service efficiency, sanitation, training, and safety practices
- Interview, hire, train, develop, and manage all culinary staff including sous chefs and cooks
- Coordinate daily production standards with Assistant Kitchen Manager
- Conduct regular staff meetings
- Control labor and assign duties to supervisors and staff
- Conduct performance reviews and coaching for all team members
- Prepare accurate staff schedules based on business volume
- Anticipate and recommend staffing needs
- Coordinate catering and banquet functions
- Ensure proper plate presentation and adherence to recipe guidelines
- Manage product quality and waste prevention
- Maintain high knowledge of company products and guest communication
- Calculate cost of goods sold and labor cost forecasting
- Utilize safety and sanitation practices and report accidents
- Adhere to company policies and procedures as outlined in the Staff Member Handbook
