Job Requirements

  • Medium to heavy strength range
  • Capable of using knives, slicers, and other food preparation equipment
  • Prior experience in Barrio Tacos kitchen operations
  • Ability to perform essential functions of multiple kitchen positions
  • Previous reviews in good standing
  • Reading, writing, basic math, and excellent verbal communication skills
  • Capable of using computer and point of sale systems
  • Able to respond in emergency situations to avoid imminent danger to self and others
  • Responsible, dependable, and flexible in scheduling
  • Current ServSafe certification

Job Duties

  • Achieve the restaurant's established food cost objectives as measured by financial statement results
  • Complete weekly food inventory to generate cost of sales reports
  • Identify food cost issues through weekly variance reports and proactively resolve them
  • Ensure invoices are entered timely and accurately into Restaurant 365
  • Maintain accurate kitchen staffing levels in accordance with labor budgets and turnover standards
  • Prepare and maintain weekly labor projections based on business forecasts and budgets
  • Monitor forecasted sales, scheduled hours vs actual hours, and labor costs using 7 Shifts Labor Proforma
  • Enforce restaurant systems, policies, and procedures to control costs and expenses
  • Conduct performance reviews every 6 months for Assistant Kitchen Managers and as needed for staff
  • Complete back of house schedules for General Manager review
  • Ensure Assistant Kitchen Managers meet performance standards per Barrio Tacos Competency and Task Review
  • Develop action and individual development plans with Assistant Kitchen Managers
  • Hold Assistant Kitchen Managers accountable for staff training and development
  • Focus on retention of quality kitchen employees by providing growth opportunities
  • Provide input on hiring and termination decisions
  • Build relationships, coach, and mentor management team and staff
  • Maintain high-energy atmosphere to improve morale
  • Implement recognition programs for kitchen employees
  • Communicate company mission and philosophy through leadership
  • Promote fair and consistent application of company policies
  • Lead by example in behavior per Employee Handbook and operational manuals
  • Ensure food product quality and purchase from approved vendors
  • Maintain kitchen security, enforce waste control, product receiving, and security policies
  • Keep operating and policy manuals available and up to date
  • Communicate and enforce safety and security procedures
  • Collaborate with management team to enforce adherence to specs and standards
  • Maintain punctuality and reliability
  • Complete documentation in compliance with payroll, labor laws, and personnel policies
  • Ensure all Assistant Kitchen Managers are ServSafe certified
  • Uphold cleanliness and Covid-19 safety standards through checklists and accountability
  • Monitor and direct sanitation programs, ensuring completion of tasks
  • Ensure availability of sanitation supplies and maintenance of kitchen equipment
  • Maintain health department sanitation standards and correct variances promptly
  • Promote strong service culture and provide hands-on leadership
  • Ensure availability of daily menu items by following ordering and prep procedures
  • Maintain standards of food production, shelf life, recipe ingredients, quality, and presentation
  • Prevent serving food past shelf life standards
  • Achieve food delivery and cooking time standards
  • Perform concurrent non-exempt duties to ensure guest satisfaction
  • Effectively communicate promotions, specials, and menu changes through shift meetings
  • Participate in weekly manager meetings and monthly Kitchen Manager meetings
  • Maintain verbal communication on the line to prevent ticket delays
  • Conduct one-on-one meetings with kitchen management regularly
  • Maintain confidentiality of company information and report violations
  • Adhere to limits of authority regarding expenditures, contracts, hiring, firing, and gratuities
