Job Requirements
- Must have at least 2 years of kitchen management experience
- Previous experience in a moderate to high volume full service restaurant
- Strong leadership and communication abilities
- Ability to work long shifts and withstand kitchen environment conditions
- Physical dexterity to handle kitchen tools and machinery
- Capable of maintaining high sanitation and safety standards
- Must have sensory skills for food quality assessment and emergency response
Job Qualifications
- Minimum 2 years of kitchen management experience in a full service, moderate to high volume restaurant
- Demonstrated track record of career advancement and success
- Strong communication skills
- Strong leadership skills
- Culinary school background preferred
- Ability to work extended shifts over ten hours
- Physical ability to stand, sit or walk for long periods
- Dexterity required to operate kitchen equipment and knives
- Ability to work in variable kitchen conditions including heat, steam, and smoke
- Possess hearing, visual and sensory abilities to detect emergencies and ensure product quality including taste and presentation
Job Duties
- Directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards, sanitation and cleanliness, training of employees in methods of cooking, preparation, plate presentation, portion and cost control and sanitation and cleanliness
- Oversees operations and running the shift of an assigned kitchen work group including HOH Key and Line Cooks
- Ensures proper staffing levels by recruiting, interviewing and hiring kitchen staff following company guidelines
- Manages assigned staff including scheduling, performance feedback, discipline, investigations and terminations
- On-boards, trains and develops HOH staff members
- Effectively communicates with management for efficient operations and fosters trust with staff and management
- Responsible for quality of products served including plate presentation and proper storage
- Achieves or exceeds food cost, labor cost and kitchen supplies budgets
- Ensures compliance with inventory procedures
- Implements and maintains all kitchen systems
- Conducts daily line checks and provides feedback to kitchen team and management
- Monitors customer feedback and follows up with corrective actions
- Conducts monthly housekeeping, food safety and sanitation reviews
- Maintains kitchen cleanliness and passes health department audits with 90% or better without critical violations
- Implements standards to avoid cross-contamination and improper food handling
- Ensures equipment cleanliness and functionality
- Orders products according to specifications and manages deliveries
- Controls food cost and waste
- Oversees employee performance appraisals and administers corrective actions
- Trains kitchen personnel in equipment safety, cleanliness and sanitation
- Maintains cleaning schedules and verifies food holding temperature controls
- Communicates clearly with managers, kitchen staff and guests
