Job Requirements

  • High school diploma or equivalent
  • Minimum five years experience in kitchen management or related culinary role
  • Ability to work full-time, standing for extended periods
  • Ability to lift up to 40 pounds
  • Ability to work under varying environmental conditions including heat, cold, dust, and odors
  • English proficiency required
  • Availability to obtain SERV safe certifications within 90 days
  • Strong attention to detail
  • Good interpersonal skills and positive attitude

Job Qualifications

  • High school diploma or GED
  • Five years related experience and/or training
  • Ability to read, analyze, and interpret business periodicals and technical procedures
  • Ability to write reports and business correspondence
  • Strong presentation and interpersonal skills
  • Knowledge of food safety and sanitation standards
  • Ability to obtain SERV safe allergen and alcohol certifications within 90 days
  • Basic math skills and ability to calculate food quantities
  • Ability to read and comprehend menus
  • Problem-solving skills in non-standardized situations
  • Positive customer service attitude
  • Ability to communicate effectively in English

Job Duties

  • Assist the Sous Chef in supervising kitchen employees in culinary activities
  • Assist the Executive Chef in menu and food-related operations
  • Oversee and coordinate all kitchen activity ensuring high-quality production
  • Organize department to maximize efficiency
  • Accept full responsibility for the kitchen in the absence of the Executive Chef
  • Monitor and control food and labor costs
  • Assist in menu development for concessions and special functions
  • Maintain kitchen equipment and train staff in its proper use
  • Assist in scheduling kitchen staff and payroll administration
  • Enforce sanitation requirements and monitor staff punctuality and attendance
  • Develop and oversee regular cleaning routines
  • Act as liaison between banquet, catering, and concession departments
  • Oversee banquet and concession functions
  • Coordinate staff for plating and carving during banquets
  • Prepare or coordinate specialty items such as ice carvings and chocolate work
  • Assist with quarterly FFE inventory and monthly food inventory
  • Assist with ordering of goods and produce
  • Complete all applicable paperwork
  • Check food storage to minimize spoilage
  • Perform other duties as assigned by Executive Chef and Sous Chef
