Job Requirements
- High school diploma or equivalent
- Minimum of 2 years experience in kitchen management
- Strong leadership and communication skills
- Ability to work long shifts including standing and walking for extended periods
- Manual dexterity for kitchen equipment operation
- Ability to work in varying kitchen conditions including heat and steam
- Sensory ability to observe and assess food quality and safety
- Willingness to adhere to company policies and procedures
Job Qualifications
- Must have 2 years of kitchen management experience in a full service, moderate to high volume restaurant
- Solid track record of success in previous assignments demonstrating upward career tracking
- Strong communication skills
- Strong leadership skills
- Culinary school background a plus
- Able to work ten hour-plus shifts plus ability to stand, sit or walk for extended periods of time
- Finger/hand dexterity to operate kitchen machinery, knives, etc
- Able to withstand changes in temperature, occasional smoke, steam and heat and work in a confined area
- Must possess hearing, visual and sensory abilities to observe and detect emergency situations

Job Duties
- Directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards

- Ensure proper staffing levels by recruiting, interviewing and hiring talented kitchen staff members following Company guidelines
- Manage assigned staff, including scheduling, performance feedback, discipline, investigations and terminations
- On-board, train and provide professional development of all HOH staff members
- Communicate effectively to management to ensure efficient operations
- Evaluate the quality, care and morale of the staff to improve work environment
- Ensure all food products are prepared and served according to restaurant recipes, portioning, cooking and serving standards
- Assume 100% responsibility for quality of products served
- Follow proper plate presentation and garnish setup for all dishes
- Handle, store and rotate all products properly
- Achieve or exceed restaurant budgets for food cost, HOH labor cost and kitchen expenses
- Ensure compliance with inventory procedures and maintain all kitchen systems
- Conduct daily line checks and provide clear feedback to kitchen team and management
- Monitor customer feedback, communicate with team and implement corrective actions
- Conduct monthly housekeeping, food safety and sanitation reviews
- Maintain kitchen cleanliness to specified standards and pass Health Department audits
- Train staff on proper sanitation guidelines and avoid cross-contamination
- Keep all equipment clean and in excellent working condition
- Ensure products are ordered according to specifications and deliveries meet policies
- Control food cost and usage by following requisition, standard recipes and waste control
- Oversee training in safe operation of kitchen equipment and utensils
- Maintain cleaning schedules for kitchen floors, mats, walls, hoods and food storage areas
- Check and maintain proper food holding and refrigeration temperatures
- Communicate clearly with managers, kitchen and dining personnel and guests
