Job Duties
- ensure food is prepared and served according to recipes, portioning, cooking, and serving standards
- oversee inventory orders and deliveries
- manage food costs through standard recipes and waste control
- maintain proper food holding and refrigeration temperatures
- collaborate with general manager to plan and price menu items
- establish portion sizes
- prepare standard recipe cards for new menus
- create and enforce departmental rules, policies, and procedures
- administer corrective action for rule violations
- maintain cleaning schedules for equipment
- prepare invoices promptly
- schedule workers in anticipation of business activity
