Job Requirements

  • Bachelor's degree or certification from culinary school preferred
  • Minimum of 3 years experience in a kitchen management role
  • In-depth knowledge of kitchen health and safety regulations
  • Ability to create and manage staff schedules
  • Strong leadership and communication skills
  • Ability to work in a fast-paced environment
  • Must be able to lift up to 50 pounds and stand for extended periods
  • Must be available to work required shifts including weekends
  • Ability to maintain cleanliness and safety standards
  • Must be free from sedatives affecting job performance

Job Qualifications

  • Ability to train and develop a diverse team
  • Familiarity with inventory control and cost management

Job Duties

  • Create weekly cook and dough schedules to accommodate business flow needs, individual staff schedules, and labor targets
  • Follow the Hash Kitchen recipe book with exactness and precision
  • Lead weekly back-of-house meetings and schedule shift manager and trainer meetings as needed
  • Work closely with and train cooks and other kitchen staff in the preparation, cooking, and presentation of food to Hash Kitchen standards
  • Monitor training processes and meet regularly with trainers to discuss staff member progress and goals
  • Lead quality control, food safety procedures, and restaurant food safety guidelines
  • Check and maintain proper food holding and refrigeration temperature control points
  • Monitor and enforce the use of temperature log
  • Supervise and coordinate activities of cooks or workers engaged in food preparation
  • Maintain back-of-house facilities and equipment to uphold safety and cleanliness standards
  • Communicate with General Manager when standards cannot be met
  • Oversee all product orders and received products
  • Control food cost and usage by following proper requisition of products from storage, product storage procedures, standard recipes, and waste control procedures
  • Perform other duties as required by upper management
