Job Requirements
- Ability to stand for long periods and work in a fast-paced, hot environment
- Must be able to lift at least 50 lbs and safely handle kitchen equipment
Job Qualifications
- Minimum 3 years of back-of-house leadership experience in a high-volume, scratch kitchen or interactive dining environment
- Current ServSafe Food Manager certification required
- Allergen Awareness preferred
- Strong knowledge of grill techniques, prep procedures, and food handling safety
- Availability to work weekends, holidays, and varied shifts
Job Duties
- Manage and train all kitchen staff including grill cooks, prep cooks, market attendants, and dish team in accordance with FiRE+iCE training modules
- Foster an energetic, team-oriented environment where performance, cleanliness, and guest engagement thrive
- Lead pre-shift meetings to review prep lists, safety reminders, and guest flow expectations
- Oversee shift transitions, ensuring full restocking, cleanliness, and readiness for the next service
- Ensure consistency in all food preparation and presentation, following standardized recipes and plate specifications
- Supervise grill operations - ensuring all meals are cooked perfectly, engagingly, and within the 8-minute service window
- Oversee the prep line and market setup daily, ensuring all ingredients are fresh, properly labeled, and maintained under safe temperature conditions
- Verify allergen and special-eats procedures are strictly followed to protect guest safety
- Enforce all health department and FiRE+iCE food safety standards, including proper labeling, FIFO rotation, temperature logs, and cleaning schedules
- Oversee chemical storage, personal hygiene compliance, glove use, and sanitation bucket testing throughout shifts
- Conduct routine kitchen inspections to ensure all work areas, floors, and equipment meet cleanliness standards
- Ensure all waste is properly disposed of and that storage areas remain organized, pest-free, and fully compliant with safety codes
- Create and maintain prep, par, and order lists based on sales forecasts
- Monitor food and labor costs to achieve budget goals while minimizing waste
- Coordinate with the management team to align kitchen operations with service goals and promotions
- Manage equipment use, maintenance, and repair - escalating issues to ownership or facilities management when needed
- Train team members using official FiRE+iCE training modules
- Conduct performance check-ins, reinforcing company values of energy, fun, and teamwork
- Lead by example in guest interaction
