Job Requirements

  • Experience leading high-volume kitchens
  • Strong written and verbal communication skills
  • High school diploma or equivalent
  • Strong organizational skills
  • Ability to work varying days, nights, holidays and weekends
  • Eligible to work in the United States
  • At least 18 years of age

  • Five years plus of kitchen management in a high-volume environment preferred
  • Five years plus of private event experience preferred
  • Experience working with an event sales team preferred
  • Multi-unit or multi-site experience preferred
  • HACCP or Serv-Safe food safety trained and certified preferred
  • Bi-lingual preferred
  • Proven leadership and team skills including ability to motivate and manage all staff levels preferred
  • Strong training and development background preferred
  • Strong knowledge of cost controls preferred

Job Duties

  • Lead the unit culinary department with integrity and purpose
  • Empower staff to deliver exceptional legendary service
  • Support the Andretti Indoor Karting and Games motto "Striving for Perfection
  • Achieving Excellence"
  • Manage daily, weekly and monthly operations including food product ordering, staffing, scheduling, cleanliness, organization, service timing, and product quality
  • Ensure banquets, buffets and event culinary offerings meet AIKG standards and specifications
  • Ensure compliance with all environmental and health board requirements related to food and beverage preparation and service
  • Develop culinary staff and supervisors
  • Manage staff training and employee relations
  • Maintain high culinary staff morale
  • Participate actively in recruitment and retention of staff
  • Manage culinary department labor and food costs to fit within budgets
  • Ensure site inspections meet acceptable standards
  • Organize and maintain cleanliness of all food storage, kitchen, and food service areas
  • Collaborate with Sales Department for event scheduling and planning
  • Oversee inventory and maintenance of culinary department equipment
