Job Requirements

  • High school diploma or equivalent
  • One year of experience in high volume food preparation and cooking in an institutional or commercial full-service kitchen for Jail Cook I
  • One year of experience performing Jail Cook I duties with Kings County for Jail Cook II
  • Possession of a valid California driver's license
  • Ability to obtain forklift operator certification during six month probation for Jail Cook I
  • Possession of forklift operator certification for Jail Cook II
  • Ability to qualify for security clearance through background check and fingerprinting
  • Ability to qualify for deputization to supervise incarcerated workers
  • Ability to work irregular hours including evenings, weekends, and holidays
  • Ability to work directly with incarcerated workers in a locked detention facility enforcing a strict lockdown policy
  • Ability to exert moderate physical force and perform tasks requiring bending, crouching, and lifting up to 50 pounds
  • Ability to climb step stools and operate various kitchen and safety equipment

Job Qualifications

  • Equivalent to the completion of the twelfth grade
  • One year of responsible experience in high-volume institutional or commercial kitchen cooking for Jail Cook I
  • One year of experience at equivalent Jail Cook I level for Jail Cook II with Kings County
  • Ability to obtain valid forklift operator's certification during probationary period for Jail Cook I
  • Possession of valid forklift operator's certification for Jail Cook II
  • Possession of a valid California driver's license

Job Duties

  • Supervises incarcerated workers and participates in preparation, cooking, and portioning of meals including special diet meals
  • Assists in planning menus and writes menu sheets
  • Prepares and cooks meat, vegetables, salads, desserts, and beverages
  • Directs the portioning of food for distribution
  • Ensures cleanliness and sanitation of kitchen and dining areas
  • Uses and maintains cooking equipment and utensils
  • Follow security procedures and report suspect behavior
  • Requisitions and supervises storage of food supplies
  • Maintains records related to food service operations
  • Instructs incarcerated workers on food preparation and safety procedures
  • Loads, transports, and unloads supplies and meal carts
  • Operates light truck and forklift to transport commodities
  • Maintains security of facilities and equipment
  • Uses personal protective equipment appropriately
  • Utilizes computer and office equipment for job duties
  • Performs related duties as assigned
