Job Requirements

  • Equivalent to completion of twelfth grade
  • one year of experience in high volume food preparation and cooking in an institutional or commercial kitchen for Jail Cook I
  • one year experience at Jail Cook I level with Kings County for Jail Cook II
  • possession of valid California driver’s license
  • possession or ability to obtain forklift operator's certification
  • ability to qualify for security clearance via background and fingerprint check
  • ability to qualify for deputization for supervising incarcerated workers
  • ability to work irregular hours including evenings, weekends, holidays and overtime
  • ability to work with incarcerated workers in a secure detention facility
  • physical ability to lift or move up to 50 pounds and push/pull carts up to 300 pounds
  • ability to climb and perform physical kitchen duties
  • effective verbal and written communication skills

Job Qualifications

  • Equivalent to completion of twelfth grade
  • one year of responsible experience in high volume food preparation and cooking in an institutional or commercial kitchen for Jail Cook I
  • one year experience at Jail Cook I level with Kings County for Jail Cook II
  • possession or ability to obtain valid forklift operator's certification
  • valid California driver’s license
  • ability to qualify for deputization and security clearance
  • knowledge of food safety, sanitation practices, food preparation techniques, and institutional kitchen equipment
  • effective communication and supervisory skills
  • ability to work irregular hours including weekends and holidays

Job Duties

  • Supervises incarcerated workers and participates in preparation, cooking, and portioning of meals including special diets
  • assists in menu planning and writes menu sheets
  • cuts and prepares all types of meat, fowl, fish, vegetables, salads, desserts and beverages
  • directs portioning of food for distribution
  • ensures cleanliness and sanitary conditions of food preparation equipment and kitchen areas
  • uses, cleans, adjusts, and performs minor maintenance on cooking equipment
  • follows rules and security procedures including reporting suspect behavior and securing locked areas
  • requisitions, inspects, and supervises storage of food supplies
  • stores food, supplies, and leftovers properly
  • maintains food service operation records
  • instructs incarcerated workers in food preparation techniques and equipment use
  • loads, transports, and unloads supplies and meal carts
  • operates light and lift trucks to move and stack supplies
  • prepares periodic and special reports
  • properly uses personal protective equipment
  • utilizes computer, telephone, and radio for job duties
  • monitors and maintains security of facilities and equipment
  • performs related duties as assigned
