The Pastry Cook - Shared Kitchen Internship role at Chukchansi Gold Resort & Casino is tailored for PRCI Tribal Members eager to advance their vocational education in Baking and Pastry through immersive on-the-job training within the Food and Beverage Department. This internship spans approximately 3,000 hours or 1.5 years, offering interns hands-on experience in pastry preparation and baking under expert supervision. Interns will work closely with the Pastry Chef and other kitchen professionals in a communal kitchen setting, mastering a range of skills necessary for successful pastry cook performance. The internship is comprehensive, with an established work plan ensuring thorough exposure to recipe adherence, food safety, sanitation, and collaborative teamwork. Interns will gain invaluable knowledge about maintaining compliance with health and sanitation standards, following OSHA and safety protocols, and effectively contributing to perfect food production and service. Successful completion of the program culminates in a Certificate of Completion, providing a robust foundation for future culinary positions within or beyond Chukchansi Gold.

Throughout the internship, participants are expected to uphold exceptional professionalism, from appearance and attendance to ethics and teamwork. Interns will be actively engaged in producing a variety of baked goods, contributing to a smooth kitchen operation by working alongside chefs, dishwashers, servers, and supervisors. Job Requirements

  • High school diploma or GED
  • Willingness to complete a vocational baking and pastry education program
  • Currently enrolled PRCI tribal member
  • Strong organization and communication skills
  • Ability to read and interpret safety rules and operating instructions
  • Ability to write routine reports and correspondence
  • Basic mathematical skills including addition, subtraction, and multiplication
  • Ability to analyze problems and interpret technical instructions
  • Ability to stand, walk, reach, and lift up to 25 pounds
  • Ability to work in environments with noise, heat, and smoke exposure
  • Ability to work with kitchen tools and equipment safely
