Job Requirements
- High school diploma or equivalent
- Minimum one year experience in institutional food service
- Six months lead or supervisory experience
- Ability to work rotating shifts including nights, weekends and holidays
- Physical ability to lift up to 50 pounds and perform tasks requiring bending, stooping, and standing for extended periods
- Ability to detect odors and indicators of food spoilage
- Valid California Food Handler Certification as required
- Must pass extensive background investigation including fingerprinting and a polygraph test
- No felony convictions or probationary status
- Ability to communicate clearly in English
Job Qualifications
- One year of experience preparing and cooking large quantities of food in institutional or similar settings
- Six months of lead or supervisory experience
- Knowledge of food preparation practices and equipment
- Familiarity with sanitation and safety practices in food handling
- Ability to supervise and train staff and inmates
- Basic math skills including addition, subtraction, multiplication and division
- Ability to read and understand recipes, instructions, and labels
- Ability to prepare and maintain records
- Valid California Food Handler Certification for some assignments
- Ability to communicate effectively in English
Job Duties
- Supervise and train paid staff and inmates or juveniles in food preparation, cooking and serving
- Prepare, cook and serve food according to menus and dietary requirements
- Check menus for items to be prepared and estimate number of persons to be served
- Make substitutions on the menu when necessary due to food availability
- Assist in ordering, receiving, checking and storing foods and supplies
- Inspect food preparation areas to ensure sanitary procedures and proper techniques are followed
- Prepare and maintain records and reports on food preparation activities
- Perform meat cutting and baking duties when required
