Job Requirements

Job Duties

  • Maintain complete knowledge of and comply with all departmental policies, service procedures and standards
  • Provide exceptional service and ensure guest satisfaction with dining experiences
  • Manage a team of food and beverage professionals ensuring brand standards and required sequence of service components are executed with precision
  • Maintain complete knowledge of all liquor brands, beers and non-alcoholic selections available in In-Room Dining
  • Maintain complete knowledge of the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list
  • Maintain knowledge of designated glassware and garnishes for drinks
  • Maintain complete knowledge of all menu items, preparation methods, ingredients, sauces, portion sizes, garnishes, presentation and prices
  • Maintain knowledge of daily menu specials and 86'd items
  • Ensure proper dining room and Pool layout, table/seat/station numbers, proper table set-ups, room and area capacity, hours of operation, price range and dress code
  • Follow P.O.S. and manual system procedures
  • Monitor daily house count, arrivals/departures, VIPs and SAGs
  • Be familiar with scheduled in-house group activities, locations and times
  • Ensure correct maintenance and use of equipment
  • Abide by all department policies and service procedures
  • Uphold Forbes, LQA and Rosewood Brand standards
  • Strictly abide by state liquor regulations
  • Be familiar with all hotel services/features and local attractions
  • Ensure compliance with standards of cleanliness, organization and guest service
  • Check storage areas for proper supplies, organization and cleanliness
  • Establish par levels for supplies and equipment and complete requisitions
  • Monitor and maintain cleanliness and working condition of equipment, supplies and work areas
  • Review previous day sales and resolve discrepancies
  • Prepare weekly work schedules and adjust as needed
  • Manage and approve void checks and assist servers with problem payments
  • Run system-closing reports and ensure all checks are closed
  • Prepare and submit daily/weekly payroll and tip records
  • Analyze profit and loss statements to contribute to financial success
  • Manage guest relations and ensure guest satisfaction
  • Anticipate guests’ needs, respond promptly and acknowledge all guests
  • Monitor and handle guest complaints following procedures
  • Exhibit friendly, helpful and courteous manner
  • Manage and direct all F&B associates
  • Interview, hire and onboard new associates
  • Conduct performance reviews and provide feedback
  • Handle disciplinary issues and counsel employees
  • Conduct daily pre-shift meetings
  • Attend division and hotel meetings
  • Inspect grooming and attire of staff
  • Coordinate proper breaks and ensure adherence to schedules
  • Conduct formal training programs
  • Monitor staff performance and rectify deficiencies
  • Assign work and side duties as needed
  • Check pick-up and side stations for cleanliness and organization
  • Inspect table setups
  • Anticipate heavy business times and organize procedures
  • Foster cooperative working climate
  • Create and maintain collaboration between outlets, vendors and corporate teams
  • Contribute to marketing and programming plans
  • Complete maintenance work orders and contact Engineering for repairs
  • Inspect and ensure all materials and equipment are ready
  • Lead planning and execution of projects
  • Ensure all closing duties are completed
  • Document information in department logbook
  • Complete paperwork and closing duties
  • Check Front Desk updates
  • Work closely with F&B Heads of Departments
  • Participate in labor meetings
  • Assist associates and managers with job functions
  • Perform all other duties as required
