Job Requirements
- High school diploma or equivalent
- Minimum of five years of professional kitchen experience
- Previous leadership role such as Sous Chef
- Food safety certification
- Physical ability to perform kitchen duties including lifting and standing for long hours
- Strong communication skills
- Ability to work in a fast-paced, high-pressure environment
- Willingness to travel for training
- Commitment to maintaining cleanliness and professional appearance
- Ability to inspire and lead a team
- Flexibility to work varied hours including weekends and holidays
Job Qualifications
- Supervisory experience
- Previous Sous Sushi Chef or comparable leadership role in a restaurant
- Minimum five years' experience in professional hospitality-driven restaurant
- Certified in safety, sanitation, and food handling procedures
- English language, professional communication, math, and computer skills
- Ability to work long standing hours (minimum 12 hours per day)
- Ability to reach, bend, stoop, and lift up to 50 pounds
- Maintain neat, clean, and professional appearance
- Problem-solving ability in live time
- Leadership skills to manage team independently
Job Duties
- Create a communicative, professional and respectful relationship with General Managers, Regional Managers, Directors, Ownership, and the team
- Properly break down fish from whole
- Ensure all products are received in correct unit count and condition and deliveries comply with restaurant policies
- Work closely with General Manager to ensure leadership, fiscal responsibilities, training, retention, and professional environment
- Lead by example to ensure the team continually strives for improvement
- Actively engage with guests, including opening and closing statements
- Perform daily working service
- Provide support to all team members and fill in where necessary
- Review monthly P&L and yearly budget objectives
- Maintain qualifying certificate in food protection
- Assume full responsibility for quality of service and financial success
- Attend all employee meetings and contribute suggestions
- Perform inventory and purchasing with management
- Prepare paperwork including forms, reports, and schedules timely
- Ensure employee performance appraisals are completed on time
- Travel for training as required
