Job Requirements
- High school diploma or equivalent
- 5+ years of professional sushi chef experience
- Prior leadership or head chef role in a sushi restaurant
- In-depth knowledge of sushi preparation and presentation
- Strong knife skills
- Ability to manage kitchen operations
- Excellent communication and interpersonal skills
- Ability to maintain high standards of cleanliness and food safety
- Must be able to stand for extended periods
- Ability to work flexible hours including evenings, weekends, and holidays
Job Qualifications
- 5+ years of professional sushi experience, including leadership or head chef experience
- Strong knowledge of traditional and modern sushi techniques
- Proven ability to work with high-quality fish and seafood
- Experience with kitchen operations, ordering, and inventory management
- Excellent knife skills and attention to detail
- Calm, focused leadership style with strong communication skills
- Ability to thrive in a fast-paced, high-volume environment
- Passion for hospitality and guest experience
Job Duties
- Lead and execute daily sushi preparation and service at the highest quality level
- Develop and refine the sushi menu, including nigiri, sashimi, rolls, and specials
- Source, receive, and inspect fish and seafood to ensure freshness and quality
- Maintain consistency in presentation, flavor, and portioning
- Train, supervise, and mentor sushi chefs and kitchen staff
- Enforce food safety, sanitation, and health department standards
- Manage sushi bar organization, prep lists, and waste control
- Collaborate with management on menu pricing, seasonal offerings, and specials
- Contribute to a positive, respectful, and team-oriented kitchen culture
