Job Qualifications
- Bachelor's degree in culinary or relevant field
- minimum of 5 years experience in a similar role
- strong knowledge of cooking methods and kitchen equipment
- understanding of MS Office and restaurant software
- excellent teamwork and leadership skills
- strong communication and interpersonal abilities
- exceptional organizational, time management, and problem-solving skills
- extensive knowledge of Japanese food preparation
- skilled in butchering Japanese fish
Job Duties
- Ensure all food from suppliers meets corporate specifications and health standards
- ensure food preparation aligns with corporate recipes and presentation
- conduct periodic quality and temperature checks
- collaborate with Chef De cuisine on order and inventory management
- maintain proper food rotation and freshness
- monitor weekly sales and adjust food prep levels
- perform daily kitchen line checks with front-of-house managers
- ensure timely food preparation within kitchen standards
- stock and set up food stations properly
- conduct kitchen walkthroughs to ensure food quality and cleanliness
- maintain compliance with restaurant and Health Department sanitation requirements
- ensure proper maintenance of kitchen equipment
- implement daily, weekly, and monthly cleaning schedules
- create and manage kitchen staff schedules
- manage labor costs by sending employees home before overtime
- participate in hiring, screening, and disciplinary actions
- assign and direct staff work
- appraise and reward employee performance
- provide coaching and training to employees
- address and resolve staff complaints
- set short- and long-term goals for staff
- manage daily prep lists and oversee prep cooks
- conduct spot checks and ensure cleaning of prep stations
- complete recipes accurately
- ensure proper labeling and temperature checking of products
- maintain kitchen professionalism and communication with other chefs
- undertake other duties as assigned
