Job Requirements

  • Ability to communicate effectively with guests, team members, and management
  • culinary experience minimum five years
  • restaurant management experience minimum two years
  • knowledge of restaurant operations including P&L management
  • hands-on culinary skills
  • effective communication
  • time management and independence
  • schedule flexibility including nights, weekends, holidays
  • ability to obtain gaming license
  • possession or obtain California Food Handler Certification

Job Qualifications

  • Minimum of five years of culinary experience in related fields
  • at least two years of restaurant management experience in similar cuisine or volume with profit and loss responsibility
  • strong knowledge of profit and loss statements, cost control, menu planning, budgeting, training, inventory control, and sanitation
  • hands-on culinary expertise across various cooking techniques including fine dining, butchering, baking, stocks, sauces, roasting, sautéing, broiling, grilling, and cold food preparation
  • effective written and verbal communication skills
  • ability to manage time effectively and work independently
  • flexibility to work nights, weekends, and holidays
  • ability to obtain a gaming license from Graton Gaming Commission
  • possession or ability to obtain California Food Handler Certification

Job Duties

  • Redefine hospitality while supporting and promoting company values
  • perform responsibilities in accordance with company standards, policies, and procedures
  • manage daily kitchen operations, ensuring smooth execution of food production and team coordination
  • develop and execute recipes aligning with brand and guest expectations
  • oversee food quality, taste, presentation, and portion control
  • coordinate production based on events and forecasts
  • maintain inventory management and cost control procedures
  • follow leadership directives from Food Operations and Property leadership
  • enforce safety and sanitation standards complying with Department of Health and OSHA
  • schedule and assign tasks efficiently to optimize staffing and control labor costs
  • uphold department policies and foster a positive work environment
  • manage team performance including feedback, coaching, and corrective actions
  • maintain accurate records for attendance, payroll, and coaching documentation
  • adapt duties as needed to meet business requirements
