Job Requirements
- Five years of experience in commercial cooking
- Apprenticeship or graduation from an accredited culinary school
- Knowledge of food and hygiene regulations including HACCP
- Good communication and organizational skills
- Service orientation
- Good knowledge of Microsoft Office and Windows-based applications
Job Qualifications
- Five years of experience in commercial cooking
- Apprenticeship or graduation from an accredited culinary school
- Additional certifications such as diet chef, industrial chef, design chef or equivalent professional experience preferred
- Certification with the American Culinary Federation a plus
- Knowledge of food and hygiene regulations including HACCP
- Good communication and organizational skills
- Service orientation
- Good knowledge of Microsoft Office and Windows-based applications
Job Duties
- Supports all food production activities in the hot and cold kitchen
- Identifies deviations in inventories and production and initiates countermeasures
- Supports the controls and adjusts production plans estimating consumption of food and equipment
- Ensures compliance with recipe specifications and conducts sense-checks
- Participates in the development of food products and menus
- Updates and distributes catering manuals within the responsible CSC
- Supports cost controlling of budget, personnel, and material costs
- Participates in menu presentations internally and externally
- Coordinates countermeasures in case of customer complaints
- Develops and supports training strategy and plans for kitchen staff
- Represents kitchen and kitchen staff to external stakeholders
- Researches and incorporates industry innovations and food trends
- Participates in marketing activities as needed
- Ensures quality of goods received
- Guarantees tidiness in food storage and follows first-in first-out principle
- Ensures adherence to hygiene, health, and safety standards including HACCP
- Organizes, staffs, and directs the area of responsibility
- Guides, motivates, and develops subordinate employees
- Embodies company values and management principles
- Implements and controls cost budget, initiates corrective actions
- Supports company-sponsored initiatives such as Global Quality Standard, HACCP, and Lean Manufacturing
