Job Requirements

  • Apprenticeship or graduation from an accredited culinary school
  • five years of experience in commercial cooking
  • additional certifications or equivalent professional experience preferred
  • knowledge of food and hygiene regulations including HACCP
  • good communication and organizational skills
  • service orientation
  • knowledge of Microsoft Office and Windows-based applications

Job Qualifications

  • Apprenticeship or graduation from an accredited culinary school
  • five years of experience in commercial cooking
  • additional certifications such as diet chef, industrial chef, design chef or equivalent professional experience preferred
  • certification with the American Culinary Federation a plus
  • knowledge of food and hygiene regulations including HACCP
  • good communication and organizational skills
  • service orientation
  • good knowledge of Microsoft Office and Windows-based computer applications

Job Duties

  • Support all food production activities in the Hot and Cold Kitchen
  • identify deviations in inventories and production and initiate countermeasures
  • support the controls and adjustment of production plans and estimate consumption of food and equipment
  • ensure compliance with recipe specifications and conduct sense-checks (Gold Standards)
  • participate in the development of food products and menus
  • maintain and distribute updated catering manuals
  • support cost controlling of budget, personnel and material costs
  • participate in menu presentations internally and externally
  • coordinate countermeasures in production in case of customer complaints
  • develop and support training strategies and plans for kitchen staff
  • represent kitchen and staff before external stakeholders
  • research and incorporate industry innovations and emerging food trends
  • participate in marketing activities
  • ensure quality of goods received
  • guarantee tidiness in food storage and adherence to first in - first out principle
  • ensure adherence to hygiene, health and safety standards and HACCP regulations
  • organize, staff and direct the area of responsibility
  • guide, motivate and develop subordinate employees
  • implement and control cost budget in the area of responsibility and initiate corrective actions
  • participate and support company initiatives such as Global Quality Standard, HACCP and Lean Manufacturing
