Job Requirements

  • High school diploma or equivalent
  • Proven culinary experience with 5 plus years as Head Chef or Sous Chef
  • Extensive knowledge of open-fire cooking techniques
  • Strong leadership and team management skills
  • Excellent communication and interpersonal abilities
  • Current Food Handler's Permit or Manager's Certification
  • Ability to work flexible hours including evenings, weekends, and holidays
  • Physical capability to stand for prolonged periods and lift up to 50 lbs
  • Commitment to maintaining health and safety standards
  • Ability to work under pressure in a fast-paced environment

Job Qualifications

  • Proven experience of 5 or more years as a Head Chef or Sous Chef in a high-volume reputable restaurant
  • Extensive expertise in open-fire cooking techniques including wood-fired grilling, smoking, and ember roasting
  • Strong leadership, communication, and interpersonal skills
  • Exceptional culinary creativity and passion for ingredients
  • Solid understanding of kitchen management, inventory systems, and food costing
  • Current Food Handler's Permit or Manager's Certification
  • Ability to work long hours including evenings, weekends, and holidays
  • Physical stamina to stand for extended periods and lift heavy objects up to 50 lbs

Job Duties

  • Develop and execute an innovative seasonal menu highlighting open-fire grilling techniques
  • Maintain consistency in taste, presentation, and quality across all dishes
  • Oversee all kitchen functions including prep, cooking, plating, and expediting
  • Expertly manage the open-fire grill with knowledge of different woods and heat zones
  • Control food costs through inventory management, ordering, waste, and portion control
  • Ensure compliance with health, safety, and sanitation standards including HACCP and local health codes
  • Recruit, hire, train, and mentor culinary team members
  • Foster a positive and high-performance kitchen culture
  • Conduct performance reviews and provide constructive feedback
  • Schedule kitchen staff to meet operational needs and control labor costs
  • Ensure quality control by maintaining standardized recipes and cooking procedures
  • Actively manage and resolve issues during service
  • Collaborate closely with management and front-of-house teams for seamless operations and guest satisfaction
