Job Requirements
- Minimum of two years' experience as a General Manager or similar supervisory role in luxury fine dining, high-volume restaurants
- Fluent in English
- Excellent knowledge of Italian food, beverages, cost control, and reporting (P&L)
- Able to obtain and maintain relevant licenses and work cards including health and alcohol awareness cards
- High school diploma or equivalent
- Bachelor's degree in hospitality management preferred
- Proficient in Microsoft Office, Outlook, POS (Micros), purchasing, warehouse requisition, time-keeping, and host systems (SevenRooms or similar)
- Ability to stand long hours
- Maintain a clean and professional appearance including attire according to Wynn standards

Job Duties
- Maintain the restaurant's facility to ensure all areas are visibly immaculate and presentable as design intended
- Approach daily business and staffing forecasts from an entrepreneurial perspective to create the best-in-class hospitality experience
- Manage the restaurant's labor relations matters compliant with the collective bargaining agreement
- Hold weekly operations meetings for the front of the house and culinary management team
- Ensure that the cost of goods sold is aligned within the budget
- Direct and manage pre-shift topics including operational details, VIP reservations, employee recognition, and service opportunities
- Create a work environment that promotes teamwork, mutual respect, and employee satisfaction
- Monitor fiscal budgets and long-term development of operations regarding revenue, costs, labor, and other expenses
- Conduct sales analysis to recommend opportunities to improve menu mix and costs
- Work closely with brand partners and executive chef to develop new food items
- Correct deviations from service procedures through on-the-job training, one-on-ones, and testing
- Establish and maintain positive relationships with guests focusing on exceeding expectations
- Populate nightly reports and record daily operation details for executive review
- Create and sustain service training programs
- Identify and anticipate guests' needs while upholding brand values
- Participate in service training to achieve target net promoter score
- Act as a visible presence engaging with guests
- Request feedback and gather information on dining experience quality
- Handle guest inquiries and complaints promptly and satisfactorily
- Manage dining time targets for various party sizes
- Provide personalized service to media and VIP guests
- Provide supervision, direction, and leadership to management and staff
- Delegate tasks equitably and mentor management team
- Develop and share vision, customer service goals, and financial objectives
- Coach, motivate, counsel, and evaluate staff participation in decision-making
- Aid in staff hiring, training, and development
- Create operational manuals and ensure team accountability
- Provide testing to ensure information understanding
- Assess service standards and arrange training sessions
- Promote empowering and respectful work environment
- Review and implement operational changes to enhance profitability
- Develop creative ideas to improve restaurant image and revenue
- Collaborate with other departments to ensure assistance
- Attend meetings and share relevant information
