Job Duties
- Monitor email leads for BEOs and confirm timely follow-up by managers
- Work with Group Sales team to accommodate team and guest needs and manage menu changes
- Review BEOs weekly with management and sales team to confirm details
- Manage communication and coordination of all FOH staffing needs with labor and workforce coordinator
- Develop and continuously improve training programs for hourly staff, supervisors, and catering managers
- Confirm all FOH staff, bar builds, and set up needs such as linen and equipment rentals
- Ensure all food and beverage orders are completed properly per SOP timelines
- Monitor inventory management to keep Cost Of Goods in line by managing ordering and product rotation
- Attend weekly events meetings to review food and beverage needs and communicate logistical setup plans
- Direct BEO assignments to supervisors and managers ensuring planning is a minimum of 3 days out
- Write schedules for all catering hourly and salaried staff timely
- Oversee scheduling process with labor coordinators to maintain labor margins and union obligations
- Review daily assignments for correct supervisor and manager alignment
- Monitor assignments and staff performance throughout shifts
- Deliver pre-shift notes addressing attendance, uniforms, compliance, and safety
- Perform walk-throughs of event setups and breakdowns ensuring thoroughness and quality
- Manage use of Sign in/Sign out sheets for labor cost and time clock compliance
- Collect and correct timesheets at the end of day per payroll SOPs
- Ensure smooth setup, breakdown, and execution of Group Sales events
- Serve as Manager on Duty for events, especially large ones, working closely with the catering team.
