Job Requirements

  • Bachelor's degree in hospitality management or related field preferred
  • Minimum of 5 years of experience in restaurant or hotel food and beverage management
  • Sommelier certification or relevant wine education is highly desirable
  • Strong organizational and multitasking abilities
  • Ability to work flexible hours including evenings, weekends, and holidays
  • Excellent problem-solving skills and attention to detail
  • Proficiency in inventory and financial management systems
  • Valid work authorization to work in the location

Job Qualifications

  • Proven experience in restaurant management, preferably in fine dining or luxury hotels
  • Extensive knowledge of wine varietals, regions, tasting techniques, and service etiquette
  • Strong leadership and team management skills
  • Excellent customer service and communication skills
  • Ability to develop and implement operational procedures
  • Experience with staff training and development
  • Skilled in budget management and labor cost control
  • Knowledge of beverage purchasing and inventory control
  • Familiarity with local laws governing alcohol sales and service
  • Ability to organize and execute promotional events

Job Duties

  • Oversee day-to-day operations of Hoku's fine dining restaurant ensuring smooth service and adherence to quality standards
  • Develop and implement standard operating procedures to optimize efficiency and guest satisfaction
  • Recruit, train, and supervise restaurant and lounge staff including servers, bartenders, and hosts
  • Schedule and allocate staff effectively to meet operational needs while controlling labor costs
  • Maintain a strong focus on delivering exceptional customer service and handle guest inquiries, feedback, and complaints professionally
  • Collaborate with the executive chef in menu development and oversee menu implementation ensuring quality and presentation
  • Oversee the afternoon tea program including menu selection, pricing, and service standards
  • Develop and manage a comprehensive beverage program including wine selection, purchasing, and inventory management
  • Train staff on wine knowledge, service techniques, and pairings
  • Provide expert wine guidance and exceptional service to guests
  • Organize wine-related events and promotions
  • Ensure compliance with local laws regulating the sale and service of alcoholic beverages
  • Report hazards and support guest and employee safety in emergencies
