Job Requirements
- High school diploma or general education diploma required
- Minimum ten years restaurant and/or hotel food and beverage experience required
- Certification of tuberculosis clearance required
- Hawaii State Liquor Commission Management Card (blue) required
- Ability to communicate effectively in English both verbally and in writing
- Ability to deal with internal and external customers with maturity, patience, tact and diplomacy
- Ability to pay attention to detail in a fast-paced environment
- Ability to analyze financial data and understand profit and loss reports
- Ability to multi-task
- Ability to operate Microsoft Word, Excel, Outlook and Micros software
- Ability to work varying shifts and maintain attendance
- Compliance with hotel rules including safety and grooming standards
- Maintain a neat and well-groomed appearance as outlined in employee handbook
Job Qualifications
- High school diploma or general education diploma
- Minimum ten years restaurant and/or hotel food and beverage experience
- Five years previous management experience preferred
- Experience in a medium to large first-class resort preferred
- Experience in creating, building and running beverage programs
- Ability to communicate effectively in English verbally and in writing
- Ability to deal with internal and external customers with maturity, patience, tact and diplomacy
- Ability to pay attention to detail and work in a fast-paced environment
- Ability to use sound judgment and follow instructions
- Ability to analyze financial data and understand profit and loss reports
- Knowledge of food and beverage industry trends and regulations
- Ability to multi-task and operate computer systems including Microsoft Word, Excel, Outlook and Micros
- Certification of tuberculosis clearance
- Hawaii State Liquor Commission Management Card (blue)
- CPR and Standard First Aid Certification preferred
- Sommelier certification or similar preferred
Job Duties
- Oversee the day-to-day operations of the fine dining restaurant ensuring smooth service and adherence to quality standards
- Develop and implement standard operating procedures to optimize efficiency and guest satisfaction
- Monitor inventory levels and manage supplies to ensure adequate stock for service
- Recruit, train, and supervise restaurant and lounge staff including servers, bartenders, and host/hostesses
- Schedule and allocate staff effectively to meet operational needs while controlling labor costs
- Provide ongoing training and development opportunities to enhance employee skills and performance
- Maintain a strong focus on delivering exceptional customer service ensuring guests feel welcomed and valued
- Handle guest inquiries, feedback, and complaints promptly and professionally striving to resolve issues to guest satisfaction
- Collaborate with executive chef and culinary team to develop innovative menus
- Oversee menu implementation ensuring quality, presentation, and pricing consistency
- Oversee the afternoon tea program including menu selection, pricing, and service standards
- Develop and maintain a comprehensive beverage program including wine, spirits, cocktails, and non-alcoholic beverages
- Curate and maintain a diverse high-quality wine list
- Train staff on beverage offerings and service techniques
- Manage purchasing and inventory of wines negotiating prices and maintaining wine cellar conditions
- Provide expert guidance to guests on wine selection and service
- Educate and train staff on wine knowledge through tastings and seminars
- Build strong customer relationships through personalized wine recommendations
- Organize and execute wine-related events and promotions
- Ensure compliance with laws governing sale and service of alcoholic beverages
- Report suspicious activities and hazardous conditions to security
- Provide guidance for guest and employee safety in emergencies
- Respond to guest questions and provide assistance in public areas
