Job Requirements

  • 3 to 5+ years leadership experience in high-volume restaurant settings
  • proven ability to recruit, train, and develop management teams
  • strong expertise in P&L, labor, and inventory management
  • experience with wine, sake, beer, and cocktail program development
  • excellent communication and interpersonal skills
  • commitment to high service standards and hospitality excellence
  • ability to work collaboratively with back-of-house and ownership teams

Job Qualifications

  • 3 to 5+ years high-volume GM/AGM or multi-unit leadership (sushi/Japanese or strong beverage background is a plus)
  • track record of building managers and stabilizing teams with clear standards
  • mastery of P&L, labor, and inventory with data-driven decision making
  • wine/sake program experience training, pricing, and sales enablement
  • community-minded operator who loves the floor, the guests, and the details

Job Duties

  • Build leaders: recruit, train, and develop managers and shift leads
  • institute a coaching cadence, performance feedback, and a ready MIT pipeline
  • own service standards: define, teach, and enforce steps of service (greeting, timing, table touch cadence, recovery playbook)
  • run daily lineups and audits
  • be on the floor: visible host presence during peak, reading the room, supporting sushi pass and bar, modeling guest engagement and pace
  • run the numbers: own P&L, labor, and COGS
  • set pars, manage inventory, and drive weekly forecasting with Toast, Homebase, OpenTable, and BevSpot (or equivalents)
  • grow sales: build neighborhood relationships, execute features/LTOs and events, and use PMIX + PPA tactics to lift check averages and traffic
  • drive the wine program: curate, price, and train sake/wine/beer/cocktail mix
  • implement by-the-glass strategy, staff education, and upsell tools
  • mentor the team: act as the steady, supportive leader with clear standards, fair accountability, and professional growth for every position
  • partner with BOH: align with chefs on quality, timing, and menu changes
  • close the loop on guest feedback and 86s
  • report to ownership: deliver crisp weekly metrics, action plans, and business cases
  • align on brand standards and business development opportunities
  • protect the house: maintain health/TABC compliance, cash-handling controls, and comps/voids discipline
  • keep both venues audit-ready
